Hayao Miyazaki, of course!
Not to sound like the obvious inspiration, but Miyazaki's preproduction sketches and watercolors make me want to draw even more. I guess my dream is someday being as amazing an artist and storyteller as him! I've acquired the "Art of..." books for most of his major films, and seeing initial concept art to the wonderful feature animations is both awe inspiring and helpful!

I totally agree. Miyazaki is one of my top favourites too. From the conceptual art to the actual animations there's always such detail, freshness and life! And, of course, they're an incredible display of imagination.
Oh, and talking about watercolors, Alan Lee's are very inspiring too.
